Easy Last Minute Flatbread Pizzas |

I made the mistake of watching pizza recipes last night and woke up literally starving. Tip for life- never watch Food Network after 11pm… seriously it’s like torture! You become extremely hungry but can’t get food because everyone will wake up and start an angry mob, well at least in my house they will. But anyways, when I woke up this morning I literally walked straight into the kitchen and began making pizza. So yeah here’s my recipe for a quick flat bread pizza that you can make with basically any of your favourite pizza toppings of just random stuff in the fridge. This is what you’re going to need:

But anyways, when I woke up this morning I literally walked straight into the kitchen and began making pizza. So yeah here’s my recipe for a quick flat bread pizza that you can make with basically any of your favourite pizza toppings of just random stuff in the fridge. This is what you’re going to need:
- 1 1/4 cups all purpose
- 1 teaspoon yeast (dry active or instant)
- 1/2 teaspoon salt
- 1/2 cup warm water
- 1 tablespoon olive oil
- ½ cup mozzarella cheese
- 2 tablespoons pesto or pizza sauce
- 1/8 cup slices onions
- 2 teaspoons grated/chopped garlic
- 1 teaspoon Italian seasoning
- This recipe is really simple and can be executed in basically less than an hour. First you want to preheat your oven to 350°F. Then combine the flour, salt and yeast in a mixing bowl and whisk everything together. If you like you can also add about two tablespoons of shelled sunflower seeds for some added crunch but I didn’t have any on hand.
- Add the oil and water and whisk everything till it becomes just incorporated.
- Use your handy dandy hands to knead the dough for about five minutes. You can do this on a floured surface or even directly in the bowl so there’s less clean up.
- Next form the dough into a ball, spread some olive oil all over it and cover it inside the bowl for about 15 minutes with cellophane wrap.
- While the dough is resting you want to prepare your vegetables. You can basically use any vegetables you like or left over meat and vegetables you have on hand. I thinly sliced onions and yellow bell pepper, as well as grated some garlic.
- After 15 minutes have passed divide the dough into four equal balls and roll it out into 5 to 6 inch circles.
- Sprinkle on ½ teaspoon of of garlic onto each circle and spread ½ tablespoon of pesto or pizza sauce on them as well. If you want to eliminate unwanted sodium you can home make the pesto or pizza sauce but this was a last minute recipe for me so I used bottled pesto.
- Add as much or as little of the prepared vegetables and then about 1/8 cup of mozzarella. I used slices so I put 3 on each circle of dough.
- Sprinkle ¼ teaspoon of Italian seasoning on top of each flatbread and you are ready to bake them.
- Put them into the oven for about 15 to 20 minutes and they’ll be perfectly cooked and oozing with delicious cheese!
I love the smell of a baked pizza and the fresh
flatbread is such a great addition! This is the perfect meal for anytime of the
day because like I said before this recipe is extremely quick to make. You can eat the
flatbreads alone or even with a side salad or roasted vegetables. Hope you give
